I will admit that this is probably one of the more peculiar things I’ve had to drink in awhile. Tasty, if a bit on the strange side.
I was drawn to this after having spent the past few days subsiding on watermelon dinners as rehydration from bike rides. I’ll switch it up, I thought, and drink my unrefined sugars in another fashion. It’s obviously easy, provided you have everything on hand and the combo of flavors sounds so gosh darn appealing! The honeydew was great–I think the lime juice is what threw me off a little bit. If I were to make this again, I’d probably add twice the mint (which is an awful lot) and halve the amount of lime juice.
My sweetooth will always win.
HONEYDEW LIME JUICE WITH MINT

1 honeydew, sliced and cubed
2-3 limes
1/2 cup mint
Mango slices, for garnish (optional)
Place honeydew cubes in a blender or food processor and squeeze all limes over top. Add mint and blend on high until smooth. Add mango slices for garnish (or just each them before they make it to the glass.)
